Dumplings for Chicken Soup

One batch                                Double batch                           Triple Batch

2 eggs                                      4 eggs                                      6 eggs

1/2 Cup Milk                           1 Cup Milk                              1 1/2 Cups Milk

1 1/2 Cups Flour                     3 Cups Flour                           4 1/2 Cups Flour

1 tsp salt                                  1 1/2 tsp salt                            1 1/2 tsp salt

 

Beat eggs, add milk, stir in flour and salt.

 

Use a large enough pan with enough water in it or chicken broth.  A double batch works out good for a chicken.  I use a dutch over with about 2 1/2 inches of room for the dumplings to cook a single or 1 1/2 batches.  I like to use a larger pot for the double and triple batches.

 

The broth should be boiling and you drop the dumplings by half-teaspoons.  Simmer dumplings for about 20 minutes with the cover on to make them light and fluffy.  Watch so they do not boil over.

 

You can always add more hot water or broth if the dumplings are too thick for the broth.  My soup usually consists of carrots, onion, celery and chicken.  A deli pre-cooked chicken works great or I cook up a skinned chicken and remove the chicken from the bones.  Then you have ready-made broth.

 

 

Vegetable Dip

1 cup mayo

1 cup sour cream

1 Tbsp onion finely chopped

1/2 Tbsp Bau Monde Seasoning

1 Tsp Dill Weed

1 Tsp Parsley

Mix together, chill before serving.

 

 

Strawberry Shortcake Bites

1 Jell-O Sugar Free Vanilla

2 tbsp. sugar-free pudding snack       

Strawberry preserves

1/3 cup cool whip free, thawed                     

4 reduced fat vanilla wafers

 

Mix pudding, cool whip, and preserves in a small bowl.  Place 4 paper baking cups on a plate.  Put 1 wafer in each.  Spoon pudding mixture on top.  Freeze for 1 hour. 

*can top with fresh fruit - raspberries or strawberries.

Mexican Pizza

1 - 8” pita                                            2 tbsp. sliced black olives

2 tbsp. salsa                                         1/3 cup shredded cheddar cheese

1/3 cup precooked chicken                1 tbsp. cilantro, chopped breast strips

 

Pre heat oven to 375 degrees.  Place the pita on a baking sheet and spread salsa on it.  Add the grilled chicken breast strips and sliced olives, then sprinkle a layer of cheese on top.  Season with a little salt and bake for 10 to 12 minutes or until the cheese is completely melted.  Remove and garnish with cilantro.  Cut into four slices and eat!

 

 

Penne Mozzarella

1 2/3 cups uncooked penne     1 tsp. minced garlic

2 tbsp. olive oil                                    1/2 cup skim mozzarella, cubed

1 pint grape tomatoes, halved 1 1/2 cups bagged baby spinach

Cook pasta according to package instructions.  Ladle out 1/2 cup of the boiled water and set it aside, then strain pasta.  In a medium skillet, warm the oil.  Add tomatoes and garlic, and saute over medium heat until soft (about 15 minutes).  Add the cheese, spinach, and pasta water.  Remove from heat.  Toss with the pasta, then cover with a lid until the cheese melts.  Makes 2 bowls.

 

 

Peach Jam

12 peaches

2 oranges

1 can crushed pineapple

Few red cherries

1 cup of pulp to 1 cup sugar

Cook about 30 minutes or until thick

  

Cream Puff Dessert

1 stick of butter

1 cup water

1 cup flour

4 eggs beaten

2 boxes instant vanilla pudding

1 - 8oz. cream cheese

Cool Whip

Chocolate

Bring water & butter to a boil - remove from heat

Add flour & mix well

Add eggs, mix well, pour into a greased 9x13 pan

Bake at 400 degrees for about 20-25 minutes.

Make pudding per box & add cream cheese, mix well

pour into cooled puff.  Spread on cool whip & drizzle

with chocolate.

 

 

Chicken Wild Rice Soup

6 chicken breast, cubed

1 box fresh mushrooms

1/2 onion, saute together

Cook 3/4 cup wild rice & 1/4 cup white rice together

Add in big pan: chicken, rice, mushrooms & onion,

2 jars old English cheese (by Kraft)

2 cups half & half

2 cups chicken broth

Simmer 1/2 hour, salt & pepper to taste

 

 

Fruit Salad Dessert

1 box vanilla instant pudding

2 med sized bananas

1/2 can tid bit pineapple or real pineapple sliced

2 med sized bananas

1 can mandarin oranges

1 tub cool whip

1 cup mini marshmallows

1. Make the vanilla pudding and let it sit to get firm follow directions on box.

2. After the pudding is firm you can add all the ingredients.  Make sure to drain the juice from the can of Mandarin Oranges and Pineapple if you use the canned Pineapple.  Also, slice he bananas.  This dessert is usually good for a couple of days in the fridge.  You can substitute, add, or delete any ingredients you would like.  Feeds 6-8 people.

 

Sugar Cookies

2 sticks softened butter (not margarine)

1 cup sugar

1 egg

1 Tbsp. milk

1 tsp. vanilla

2 3/4 cup flour

1 tsp. baking powder

1/4 tsp. salt

Cream butter - gradually add sugar.  Beat until fluffy.  Add egg, milk & vanilla.  Beat thoroughly.  Add flour, baking powder & salt.  Chill overnight before rolling.  Bake 8-10 minutes at 350 degrees.

 

 

Apple Streusel Cheesecake Bake

1 pouch (1 lb. 1.5 oz.) Betty Crocker oatmeal cookie mix

1/2 cup firm butter or margarine

2 packages (8 oz. each) cream cheese, softened

1/2 cup sugar

2 tablespoons all-purpose floor

1 teaspoon vanilla

1 egg

1 can (21 oz) apple pie filling

1/2 teaspoon ground cinnamon

1/4 cup chopped walnuts

1.   Heat oven to 350 degrees.  Spray bottom and sides of 13x9-inch pan with cooking spray.

2.   Place cookie mix in large bowl.  With pastry blender or fork, cut in butter until mixture is crumbly and coarse.  Reserve 1 1/2 cups crumb mixture; press remaining crumbs in bottom of pan.  Bake 10 minutes.

3.   Meanwhile, in large bowl, beat cream cheese, sugar, flour, vanilla and egg with electric mixer on medium speed until smooth.

4.   Spread cream cheese mixture evenly over partially baked crust.  In medium bowl, mix pie filling and cinnamon.  Spoon evenly over cream cheese mixture.  Sprinkle reserved crumbs over top.  Sprinkle with walnuts.

5.   Bake 35 to 40 minutes longer or until light golden brown.  Cool about 30 minutes.  Refrigerate to chill, about 2 hours.  For bars, cut into 6 rows by 4 rows.  Store covered in refrigerator.

 

Strawberry Cake

1 box white super moist cake mix

3/4 c. water

1c. applesauce

3 egg whites

1 6 oz. yo-plait lite strawberry yogurt

Bake in 9x13 pan at 350 degrees for 35 to 40 minutes.

Topping: 1 6 oz. lite strawberry yogurt, 1 6 oz. lite cool whip. 

Strawberries to garnish & refrigerate

 

 

Snack Loot

6 cups Apple Cinnamon Cheerios

1 1/2 cups animal crackers

1 1/2 cups miniature cheddar cheese fish-shaped crackers

1 1/2 cups miniature pretzels

1/2 cup sugar

1/3 cup honey

1 tsp. ground cinnamon

Dash salt

1/2 cup gummy candy shapes

In a large bowl, combine Cheerios, animal crackers, fish-shaped crackers and pretzels.  In a small saucepan, combine the sugar, honey, cinnamon and salt.  Cook and stir over low heat until sugar is dissolved.  Pour over cereal mixture and toss to coat.  Transfer to two greased 15in x 10in. x 1in. baking pans.  Bake at 275 degrees for 20 minutes, stirring once.  Cool completely. 

 

 

Apple Crisp

5-6 Apples

1 cup sugar

1/4 cup flour

1 tsp cinnamon

Topping: 1 cup melted butter

1 cup brown sugar

1 cup flour

2 cups oatmeal

1 tsp. cinnamon

Bake 350 degrees for 45 minutes

 

Healthy Pancakes

1 cup old fashioned oats

1 cup fat free cottage cheese

1 cup egg whites

1 tsp. cinnamon

1 tsp. vanilla

Blend up all ingredients and cook on griddle.

 

 

Poor Man’s Prime Rib

2-3 lb. roast

Mix together: 1 pkg. Hidden Valley Ranch dressing (dry), 1 pkg. aujus (dry), 2 tsp. beef bouillon & water.

Place roast in crock pot, covered in 1 inch of sauce.  Cook low for 8 hours

 

 

Diet Coke Chicken

1 package chicken breast

1 can diet coke

1 cup ketchup

Put in slow cooker - the longer the better

 

 

Taco Dip

Mix: 12 oz. sour cream

8 oz. cream cheese

2 Tbsp. chopped onions (optional)

1 packet taco flavoring

When ready to serve, spread on plate or flat dish.  Top with one or more ripe olives, chopped lettuce, chipped bacon, green peppers, grated cheese, hamburger, chips

 

 

Bean Burritos

1 can refried beans

1 lb. hamburger meat

10 burrito size shells

Slice of cheese

Cook ground beef, add refried bean to ground beef.  Spread on shell, add cheese, wrap in foil. 

Bake for 10 minutes.

 

Quick Carmel Rolls

1 stick margarine (melt)

1/2 teaspoon cinnamon

2 tablespoons milk

2 small packages of vanilla pudding (not instant pudding)

2 frozen bread lofes

Thaw 2 lofes & cut into pieces.  Place into lightly greased 13x9 pan.

Mix all above together & pour over dough.  Let rise an hour & bake at 375 degrees for

30 minutes or until brown.

 

 

Better Than Sex Cake

1 German chocolate cake mix, bake according to directions

WHen you take cake out of over, poke holes all over top with handle of wooden spoon.

Pour 1 jar of Mrs. Richardsen’s caramel (butter-scotch) toppings over cake.

Let cool.  Cover cake with 1 carton cool whip.  Crumble 3-4 Score candy bars & sprinkle over cool whip.  Refrigerate.

 

 

French Dip

1 pot roast

1 can french onion soup

1 can beef broth

1 pkg. dry aujus

1 can or bottle of beer

Put in crock pot low all day.  Eat on favorite hoagie buns.

 

 

Chicken & Rice Casserole

1 cup of uncooked rice

1 can cream of chicken

1 can of water

1 packet lipton dry onion mix

1 - 2 lbs. raw chicken cut up

1.   Spread one cup of rice on the bottom of glass baking dish

2.   Sprinkle 1 packet of dry onion mix

3.   Spread cut up pieces of chicken over rice mix

4.   Mix 1 an of cream of chicken and one can of water and our over top of pan

5.   Bake at 350 degrees for 45 minutes to 1 hour.

 

 

Orange Salad

1 carton cool whip

Mix in 1 package orange jello (dry)

Add: 1 small carton cottage cheese, 1 can mandarin oranges - drained

Mix well

*  1 can pineapple tidbits optional

 

 

Parmesan Appetizer Loaf

1 packet yeast

1/4 cup warm water

3/4 cup lukewarm mile (scalded - cooled)

1/4 cup sugar

1 tsp. salt

1 egg

1/4 cup butter

3 1/2 - 3 1/4 cup flour

1/2 cup butter

5 oz. Parmesan cheese

Dissolve yeast in water.  Stir in mike, sugar, salt, egg, 1/4 cup butter & 2 cups flour.  Beat until smooth.  Mix in enough flour to make dough easy to handle.  Kneed dough 5 minutes.  Place in greased bowl.  Cover, let double, about 2 hours.  Line tube pan with foil, grease.  Punch down dough, divide into 24 pieces.  Dip pieces into butter, then in cheese.  Layer in plan.  Let rise until double.  Bake at 375 degrees for 35 minutes.

 

 

Brunch

1 lb. fried sausage, drain

7 eggs, beaten

7 pieces of bread, torn up

1 tsp. salt

1 tsp. mustard

2 cups milk

1 cup shredded cheese

Bake 1 hour at 325 degrees

 

 

Turkey and Wild Rice Soup

6 oz. package of chicken & wild rice mix

4 - 6 cups water

10 oz. package frozen chopped broccoli

1 medium carrot, shredded

2 tsp. dried minced onion

1 can cream of chicken soup

8 oz. cream cheese, cubed

2 cups chopped chicken or turkey

Combine rice, seasoning packet and water.  Bring to boil.  Reduce heat and simmer for 10 minutes, stirring once.  Stir in broccoli, carrots and onion.  Cover and simmer for 5 minutes. Stir in turkey, soup, and cream cheese. Cook until cheese is melted.

 

 

Taco Pie

1 lb. hamburger, 1 package taco seasoning, 1 can crescent rolls

1/2 cup salsa

1/2 cup water

8 oz. carton sour cream

6 slices american cheese

1 1/2 cup corn chips (divided)

Brown hamburger & drain, add water, salsa, taco seasoning & simmer for 5 minutes.  In a 9” pie pan, lay out crescent rolls like a crust.  Layer on top 1 cup corn chips, then add hamburger on top.
